These round shaped cheeses are the pride of Edam. They first came about in the 14th century in the wealthy harbour city of Edam. Cheeses of around 2 kilos: great to take on board.
North Holland thrived at its best. This cheese has been produced at the highest quality since the 16th century.
Exclusively at Gestam: the Mimolette. First came about in the 17th century and originally an imitation of the Edam Cheese, or more like a double Edam Cheese.
