Gestam has a large variety of cow milk cheeses. Not all lovely cheeses are necessarily made from cow’s milk though. This statement is strongly emphasized by 2 of our North Holland suppliers of quality cheeses, Westfriesedijk and Klaver. These producers produce gorgeous cheeses from sheep- and goats milk.

Mild and creamy at a Young age, but as an older cheese also strong, full of character and let’s just say ‘sheepish’: sheep cheese is a delicious 50+ cheese which will suit most preferences of taste. Furthermore, sheep cheese is a source of Omega 3, vitamin D and calcium. And as if this all is not enough, this cheese is produced in the unparalleled idyllic scene of the most northern part of North Holland.

Since 2001 Nico and Irma Verduin of the Westfiesedijk have been running a dairy sheep farm which produced high quality sheep cheese in a socially responsible manner and in a modern and profitable way. The farm covers 26 hectares of meadow of which 20 hectares is a nature reserve which houses a variety of breeding birds: which obviously makes grazing so much nicer for their 700 dairy sheep.

Goats Cheese

Extraordinarily creamy, soft and pure: Young goat’s cheese in a velvet treat for the tongue. Very easily digestible, so ideal to consume any time of day. A bit pale? This is because the goats convert all carotene (natural colorant) into vitamin A – therefore a healthy cheese!

Clover Cheese

The 2100 goats from Klaver receive the best possible care on the green freshly cut fields of North Holland. They receive fair nutrition and are milked twice a day. And this is what you will notice in the elegant taste of Young goat’s cheese. Do you have a preference for robust, strong and intense? We are more than happy to leave or 50+ goats cheeses of 5 or 10 kg mature some more on our cheese boards.
